Back to School Baking

Back to School Baking


Here are the links and recipes for this weeks' bake up.

Monster Biscuits:

1 1/2 cups of peanut butter
1 cup of brown sugar
1 cup of raw sugar
225 g butter
3 eggs
1 tbsp vanilla extract
4 cups of oats
2 tsp baking soda
1 cups of any mix in you like.

Preheat oven to 180 degrees. Combine peanut butter, sugars and butter on speed 5 for 20 seconds or until combined. With blades still running add 1 egg at a time then vanilla and baking soda. 
Add oats and mix on speed 4, reverse blades until combined. Stir in mix ins.

Roll into balls ad bake for 12 - 15 mins. Leave on baking tray until cookies are set. These freeze really well.

Strawberry and Yoghurt Muffins: Adapted from Women's Weekly Kid's Baking Cook Book

225 g wholemeal flour
110 g caster sugar
2 tbsp macadamia oil
2 eggs
280 g low fat greek yoghurt
150 frozen of fresh fruit ( I used strawberries)
You can add chocolate too if you wish

Preheat oven to 180 degrees. Place flour and sugar in TM bowl and mix speed 4 for 10 seconds.Add the remaining ingredients except the fruit an mix on speed 4 until combined. Add fruit and mix on reverse speed for 5 seconds speed 3. Place mixture into muffin tin / tray and bake for approx 25 mins. 

Double Choc Slice: Adapted from Women's Weekly Kid's Baking Cook Book

135 g butter
220 g brown sugar
100 g dark chocolate (grated of chopped)
110 g oats
1 egg
110 g plain flour
35 g SR flour
1/2 bi carb soda
130 g dark choc chips

Preheat oven to 160 degrees. Line a lamington tray with baking paper. Place butter in TM bowl. Melt on speed 3/ 50 degrees for 2 mins. Add the sugar and mix on speed 3 until combined. Let cool for a few minutes. Add the egg and mix on speed 4 until combined. Add the dark chocolate and mix on speed 4 / reverse for 10 seconds. Then add the dark choc chips on speed 4 / reverse until combined. Spread mixture into pan and bake for approx 30 minutes.

You could also drizzle melted chocolate over the top when slice has cooled.  We have this in the freezer too.

I used cacao powder instead of cocoa. I made mini muffins instead of a loaf.

Simple recipe. Put all the ingredients in and mix. 20 seconds! I didn't add the extra choc chips as the mixture is very sweet.

I creamed the butter and sugar on speed 4 for 25 seconds, then added the remainder of the ingredients on reverse , speed 4 until all combined.

Muesli Slice - Hello Little House Recipe
I pressed this recipe into the mini muffin trays. I also waited for then to cool completely before removing them. No nuts too! I melted the butter and sugar on 60 degrees, speed 2 for 1 1/2 mins, then added all of the ingredients. For the seeds, I used pepitas, linseeds and sunflowers. Mixed on reverse speed 4 until combined.

Raw Cacao Bliss Balls - Thermomix Recipe Community -
I made these at a demo yesterday and again for our family last night. Mill the almonds for 20 seconds and add the rest of the ingredients. They are now in the freezer so I can't see them!

I found this recipe during the week on fb and took a photo to save it on my phone. I made a slab rather than circle biscuits and used the pizza cutter to make individual squares. If you are after a 3 ingredient shortbread recipe, use this one. Tastes great!

350 g plain flour, 100g icing sugar and 250 g chilled butter. Mix on speed 4 until dough forms and pop in some sprinkles. Turbo until sprinkles are combined. Bake for 12 - 15 min on 160 degrees.

Sunday Night Special ... Cooking for the family

 I visited the farmer's markets again today and stocked up on vegetables. We have had a massive weekend here and haven't eaten very healthily, so I decided to make Quirky Cooking's Chunky Bolognaise. It is an easy Thermie recipe which uses heaps of vegetables and three kids devoured it.

I also grabbed 1 kg of sweet potato at the markets and made a delicious Thai Sweet Potato soup from the Thermomix Recipe Community. This soup is super easy to make and only takes 20 minutes. A full flavoured soup. Yum!

Chicken Tonight.. 5 ways

I have been defrosting 1 1/2kgs of chicken breast today and ways trying to think of new recipes to experiment with. I come up with 4 dishes but still had chicken left. I then consulted a great Facebook group called 'Thermobexta' and they have a great bunch of people who love to help each other. I posted my dilemma about having a large amount of chicken and I chose the sausage rolls from the list. I am so glad I did! Head over and join the group too.

So, here's what the Thermie and I created tonight. Chicken --- 5 ways!

1. Quirky Cooking Chicken Sausage Rolls -

I used my own puff pastry that I defrosted from the freezer and I didn't add the spicy Indian paste but these are sensational. I have frozen a few rolls for the weekend and I really don't think these cooked ones will make it to the morning. Dip them in soy sauce or sweet chilli sauce and you are set!

2. Creamy Chicken and Cauliflower Rice Soup - Thermomix Recipe Community -

This is a low carb soup which we all ate for dinner. Packed full of vegetables and thickened by almond meal and cauliflower. It contains no cream and I used my vege stock from the EDC rather than making chicken stock. This is an easy soup recipe with 30 minutes of free cooking time to get the kids organised.

3. Popcorn Chicken - Thermomix Recipe Community -

We have this flour spice mix stored in a container ready to crumb chicken. It tastes like the real thing and I baked them tonight rather than frying. They have sadly been eaten.. no leftovers!

4. Steamed Chicken and Vegetables - Using the Thermomix Varoma (steamer)

This is my work lunch tomorrow and I usually make this in the morning as it only takes 20 minutes. I chopped up some cabbage, zucchini and carrots and placed in the Varoma dish and sliced up chicken breast and placed on the tray. There was 1 L of water in the jug and I cooked it for 20 minutes / Varoma temp and speed 3. You can add spices and marinades if you would like to.

5. Shredded Chicken - (not shown)

I used some of the steamed chicken and placed back in the TM bowl on speed 4 for a few seconds to shred. It is now in zip lock bags in the freezer for rolls, wraps and sandwiches. You can add lemon or lime juice and herbs or spices at this step too.

We love chicken here and if you do too, give these recipes a go! I might just whip up a dessert as the kids have gone to sleep and I won't have to share.. Shhhh!

Today's Treats.. Sugar Free Snacks

I have returned from running the City2Surf in Sydney and my body is in recovery mode. Today I made sugar free treats for the boys and I that we can snack on without loading up on sugar.  If you would like to cut down or reduce your sugar intake, try these delicious recipes.

Muesli Bars - Gluten Free, Dairy Free, Nut Free and Refined Sugar Free

I made these in the silicon muffin trays like the recipe suggested and I have only just taken them out as they needed to set. Super delicious snack and great for the lunch box too as they are nut free!

This recipe tastes like the original. With simple ingredients, the Thermie whizzes the cashews and coconut and I made the cacao topping in the Thermie too. Super simple recipe.

Today's achievements.. Perfecting Dough

I was on nursing duties today as the husband and Mighty Toddler were sick. I didn't get a chance to do a quick grocery run so I needed to make some essentials. I have made heaps of bread before in the Thermie but I thought I would try The Road to Loving my Thermo Mixer website's Soft Bread.  I made the large loaf recipe and made 3 bread rolls and a loaf of bread. This is hands down the best bread I have made. Next challenge was to make some wraps. The boys have been taking these to school every day so I needed to find a recipe that I could quickly make while everything else was going on tonight.  I have wanted to make wraps for ages and I am really happy with my efforts.  The recipe is from the Recipe Community and I only made half a batch but still made 10 wraps.  They freeze really well according to the comments so that should get us through to the end of the week. Yay!

Last of all..Dinner.  Pizza and pork dumplings (full of veges too) were on the menu as chosen by the boys so I made pizza dough from the Everyday Cook Book. As a Thermomix consultant, we make pizza dough often and because I had the oven going and the Varoma steaming the dumplings, the dough proved beautifully. This recipe make enough for 2 large pizza bases so I have a spare in the freezer if anyone wants to try it!
