I have been so happy all day today because I have made my first recipe from the new Quirky Cooking Cookbook. Last night, husband read the entire cook book and decided that he would like Beef Stroganoff with cabbage Noodles for dinner tonight.
So, I quickly popped to the shops this morning, stocked up on some meat and have made the most delicious Beef Stroganoff ever... I will be in the good books tonight! Just as well as I am heading out to dinner with the girls.
This recipe is ridiculously easy and only took 25 mins to make. The meat is super tender like it has been slow cooked for hours and the hint cayenne pepper adds to the dish.
I now have a massive list of my next Quirky Cooking recipes to make.

With only a few hours left of holidays, I have been busy stocking the freezer with lunch box friendly food for the boys.
Today I have made Well Nourished No Nut Slice, Cookie Dough Balls, Healthy Choc-Coconut Slice and Basic Biscuits from The Organised Housewife.
I have personally sampled all items, the kitchen is clean and I am in total denial that I too have to return to work in the morning, Thank goodness there is only 10 more weeks till the next holidays!
Oh, I have made a little special surprise for staffroom bench too for morning tea to get us through the day.

I am exhausted today after running a half marathon and I can barely move my legs, but I was determined to use my Thermie to use up some vegetables in the fridge and make a yummy dinner for my cheer squad today.
In one hour and 15 minutes with a lot of down time, I made 3 dishes for dinner. I managed to make a Cauliflower, Zucchini and Leek Soup, Easy Pumpkin Soup and a Chicken and Mushroom Risotto. I was able to rest when they were cooking as I didn't need to stir. So thankful for my Thermie today!
I also had to make a fresh batch of vegetable stock that is the secret ingredient in all my Thermie dishes as it is full of flavour and one batch lasts 3 months in the fridge. The boys picked a soup for dinner and had a big bowl of risotto. Made my day :)

Yesterday was my big sister's birthday and my present to her was to make some treats for herself and the family while she is away so they don't have to worry about eating take away.
I made a little tray of treats for the girls to take on the plane and beyond and I will make a dinner each night for her husband, my mum and the three kids (Yes, she has 3 kids as well... she just needs a Thermie and we would be twins!!)
The special treats where apricot slice with 3 ingredients, a healthy carrot cake, my favourite vanilla and chia seed cupcakes and apricot and macadamia nut bliss balls. I will post the dinner selection when I've whipped them up!
