Before School Run

It was a fresh start to the morning here this morning but I managed to get out of bed to get some training in before the kids woke up.  For those of you who don't know me very well, I am training for a half marathon in 2 1/2 weeks' time.  But today, my training proved to be the easiest part of my day.

When I returned, I made a quick Blueberry Protein Shake and then made a batch of Easy Ciabatta Bread.  When the bread was proving, I made a delicious Paleo Caramel Slice for afternoon tea with a special friend.  

While the bread was proving and the caramel slice was baking, Husband lost his work shoes, Mighty Toddler was determined to do toilet training, Medium Poppet was asking a thousand questions about life and the washing machine decided to overflow with bubbles.  Husband then lost his keys before leaving and I had to get the boys to two different schools today at the same time. Yay! 

The good news is, the caramel slice took 1 minute to make, the dough for the Ciabatta took 10 seconds to make and another 13 minutes to work it's magic in the Thermie and my breakfast was full of protein and super foods.  I definitely couldn't have achieved all of that this morning without my Thermie.

Blueberry Protein Smoothie


150 ml Almond Milk
20 g Frozen Blueberries
30 g Whey Protein Powder
Ice
Mix on speed 9 for 5 - 7 seconds


5.78g Carbs  24.62g Protein  3.44g fat

Paleo Caramel Slice 


2 cups of Almonds
1 cup of Dates
1/2 cup of Macadamia Nuts
1/2 cup of Cashews
120g Coconut Oil
1/2 cup of sugar (I used Coconut Sugar)

 


Place nuts and dates in the Thermie on speed 9 for 10 seconds.
Take out and set aside.
Melt the coconut oil and coconut sugar on 50 degrees for 2 minutes speed 3 or until oil is melted.
Place the nut/date mix back into the bowl and mix until combined. 
Line a square baking tray and press mixture in.  I use the back of the MC to consolidate the mixture.  
Bake for 20 - 25 mins at 180 degrees.


So when I finally returned home from the school run, Husband had already been home to eat his lunch and half of the caramel slice. I don't blame him. It is irresistible!

The kids have now passed out, I'm nearly finished writing this post which I have been trying to do all day and I'm ready to make a cuppa and to find a piece of slice.
