Dinner Delights

This week has been a busy week as usual but I have been able to make a few dishes that have made leftovers as I know I'm going to be away from my Thermie for the next few nights and I would hate for my boys to starve. As if...

By creating bulk to a few dishes by adding extra veges, my freezer is now overflowing with meals.  

These are a few of the meals that we have had this week so far.. Plus I made tuna slice (twice) this week and one batch was eaten and one is in the freezer for lunch boxes. The boys have taken it to school instead of rolls and sandwiches.

Egg and Bacon pie with Shortcrust pastry - 

I only used 6 eggs and 1 quantity of the Shortcrust pastry. The pastry is super quick to make (15 mins in the fridge after making) and I added celery and herbs to the pie.



Nan's Zucchini Slice - Sistermixin - 

So easy to make in the Thermie. In under a minute everything was blended and I even squeezed in some exercise while the slice was cooking. Too easy! I added celery and used spelt flour and macadamia oil.



Potato and Leek Soup - Thermomix Recipe Community - 

This took 30 minutes and made 2 litres of soup. I added celery and a parsnip and used skinny evaporated milk. So creamy the kids thought there was cheese in it.  Fresh parsley too from my herb garden.



Low Fat Lasagne with Ricotta - Taste.com.au -

I substituted the beef mince for pork and used pasta dough for the lasagne sheets. I even squeezed in some vege stock concentrate for extra goodness.



Chocolate Custard - 

This is so easy to make in the Thermie. 10 mins and you are done. One bowl to clean and that's it! I used cacao powder instead of dark chocolate, only 20 g of cornflour and didn't add the nuts, just fresh fruit. Almond milk is a great alternative to cow's milk and has less carbs and sugar. The kids don't know the difference. 


Tuna Slice - Thermomix Recipe Community -

Only difference to the recipe was that I added basil and chives from the herb garden. Super quick to make and easy to eat for the little ones. 

There are heaps of "samples" in the freezer if you would like to try something!!

    1. Awesome Jess. The boys take it it to school too and it stays together for Leo to eat easily by himself.. Gotta love that!
